Allen Wizorek's Famous Banana Bread
INGREDIENTS
1 1/4 cups sugar
1/2 cup softened butter
2 eggs
4-5 medium bananas
1/2 cup milk
1 1/2 teaspoons lemon juice
1 teaspoon vanilla
1 teaspoon baking soda
1 teaspoon salt
2 1/2 cups all-purpose flour
STEP 1 Pre-heat oven to 350 F. Grease bottoms of 2 loaf pans. 8 1/2x4 1/2x2 1/2 in, or 1 loaf pan, 9x5x3 inches. I use Pam baking spray.
STEP 2 Mix sugar, softened butter, and eggs in large bowl. Stir until well blended. Add bananas, and vanilla. Add lemon juice to milk and then add to bowl. Beat until smooth. Stir in baking soda, salt and flour just until moistened. Pour into Pans.
STEP 3 Bake 8-inch loaves about 1 hour, 9-inch loaf pan about 1 1/4 hours, or until toothpick inserted in center comes out clean. Cool 15 minutes. Loosen sides of loaves from pans; remove from pans and place top side up on cooling rack. Cool completely, about 2 hours, before slicing. Wrap tightly and store at room temperature up to 3 days, or refrigerate up to 10 days.
HELPFUL TIPS
Mini Banana Breads. Use only 2 cups of flour in recipe instead of 2 1/2 cups of flour. Pour evenly in greased mini banana bread pan and bake for 30 to 35 minutes.
Want a little flavor? Stir in 1/2 cup chocolate, peanut butter or butterscotch chips into the batter for mouthwatering flavors.
